VARIETAL:  100% Cabernet Franc

WINEMAKING: Manual harvest and hand sorting. Destemmed, then 3-5 day cold maceration at 10°C. Stainless steel tank fermentation with punch down/pump over. Cap is pressed.

TASTING NOTES: Very well balanced with medium tannins and medium plus acidity. Rich dark cherry, plum, and blackberry fruit with oak inspired vanilla.

FOOD PAIRING: Ideal with braised short ribs, lamb and beef, or even a hearty stew.
