VARIETAL: 100% Gamay
REGION: Azcuénaga Vineyard in Lunlunta, Maipú, Mendoza
WINEMAKING: Manual harvest and sorting. Destemmed, then less than 1 day cold maceration at 10°C to extract a lovely pink color from the skins. Pressed, then stainless steel tank fermented with temperature controlled to max 18°C. Four months élevage in stainless steel.
TASTING NOTES: Well balanced with very nice acidity. A hint of light tannins from the dark thick skinned Gamay varietal. The tastes reflect the aromas of fruit and flowers.
FOOD PAIRING: Serve with salty meats like prosciutto or salami and soft, creamy cheeses such as brie, goat cheese, or feta. Excellent with grilled salmon, shrimp, or tuna, especially when charred. Pairs well with earthy dishes like roasted root vegetables, beetroot, or herb-based Mediterranean foods.
