VARIETAL: Cabernet Sauvignon
WINEMAKING: Manual harvest and hand sorting. Destemmed, then 3-5 day cold maceration at 10°C. Stainless steel tank fermentation with punch down/pump over. Cap is pressed.
TASTING NOTES: Very nicely balanced with medium plus structured tannins and acidity. Fruit is ripe dark cherry, plum, and blackberry with vanilla, clove, and peppercorn.
FOOD PAIRING: Ideal with grilled and braised meats and hearty stews.
